  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the whole wheat flour, almond flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the eggs, honey or maple syrup, applesauce, and melted coconut oil.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the blueberries.
  6. Distribute the batter evenly into the muffin tins.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
