  • 1 pound boneless chicken thighs
  • 1 tablespoon turmeric powder

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • salt to taste
  • pepper to taste
  • 1 cup green beans, trimmed

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add carrots, celery, and garlic, cooking for an additional 5 minutes.
  3. Stir in turmeric powder, then add the chicken thighs and cook until slightly browned.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and simmer for 30 minutes or until chicken is fully cooked.
  6. Remove chicken, shred it, and return it to the pot.
  7. Add green beans, lemon juice, salt, and pepper, simmering for another 10 minutes.
  8. Serve hot and enjoy!
