  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup apple cider
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add 1 cup sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition. Then add apple cider, cinnamon, and nutmeg, mixing until fully incorporated.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Bake for 55-60 minutes or until the center is set.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a stronger apple flavor, reduce the apple cider by half before adding it to the filling.
