2 medium aubergines
4 ripe tomatoes
200g mozzarella cheese
1 bunch fresh basil
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon balsamic vinegar
Instructions
Preheat the oven to 190°C (375°F).
Slice the aubergines into 1cm thick rounds and sprinkle with salt, let sit for 20 minutes, then rinse and pat dry.
Layer the sliced aubergines in a baking dish.
Chop the tomatoes and layer them over the aubergines.
Slice the mozzarella and place it on top of the tomatoes.
Drizzle with olive oil, balsamic vinegar, and season with pepper.
Bake for 30-35 minutes until golden and bubbly.
Garnish with fresh basil leaves before serving.
Notes
For extra flavor, add some minced garlic between the layers.
Let the dish rest for a few minutes before serving to enhance the flavors.
