Bacon and Tomato Cottage Cheese Pasta Bake

A comforting and delicious pasta bake combining the richness of bacon and cottage cheese with the freshness of tomatoes.

Ingredients

  • 8 ounces pasta
  • 6 slices bacon
  • 1 cup cottage cheese
  • 1 cup chopped tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente.
  3. In a skillet, cook the bacon until crispy. Remove and crumble.
  4. In a mixing bowl, combine the cooked pasta, bacon, cottage cheese, tomatoes, Italian seasoning, and half of the mozzarella. Season with salt and pepper.
  5. Transfer the mixture to a baking dish and top with the remaining mozzarella.
  6. Bake for 25-30 minutes until the cheese is bubbly and golden.
