Banana Cinnamon Pecan Cupcakes with Cream Cheese

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mash the ripe bananas.
  3. In another bowl, mix the flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, cream together the butter, granulated sugar, and brown sugar.
  5. Add the eggs and vanilla to the butter mixture, and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the mashed bananas and chopped pecans.
  8. Pour the batter into the cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let the cupcakes cool completely.
  11. For the frosting, beat the cream cheese, powdered sugar, and vanilla together until smooth.
  12. Frost the cooled cupcakes with the cream cheese frosting.

  • Ensure the bananas are ripe for better sweetness.
  • You can top with additional pecans for garnish if desired.
