Blueberry Cream Cheese Muffins

Deliciously moist blueberry cream cheese muffins that are perfect for breakfast or a snack.

  • 1 cup all-purpose flour
  • 1 cup fresh blueberries
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, beat the cream cheese and sugar together until smooth.
  3. Add the milk, vegetable oil, egg, and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the blueberries.
  7. Divide the batter among the muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

  • For extra flavor, add a pinch of cinnamon to the batter.
  • These muffins can be frozen for up to 3 months.
