Butternut Squash Pasta Sauce

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then toss it with olive oil, salt, pepper, and nutmeg.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. Transfer the roasted squash to a blender, add vegetable broth, heavy cream, and garlic powder, and blend until smooth.
  5. Heat the sauce in a pot over medium heat, then serve over your favorite pasta.
