Carrot Cake Cheesecake

A deliciously rich and creamy dessert that combines the flavors of classic carrot cake with the silky smoothness of cheesecake.

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a springform pan.
  2. In a large bowl, mix together grated carrots, sugar, brown sugar, oil, and eggs until well combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Gradually add dry ingredients to the carrot mixture, stirring until just combined.
  5. Fold in crushed pineapple and chopped walnuts.
  6. Pour the mixture into the prepared springform pan and bake for about 30-35 minutes until a toothpick inserted in the center comes out clean.
  7. While the cake cools, prepare the cheesecake layer by beating cream cheese until smooth, then gradually adding powdered sugar and lemon juice.
  8. Once the carrot cake is completely cooled, spread the cream cheese mixture on top and refrigerate for at least 4 hours.

Notes

  • For extra flavor, add raisins or shredded coconut to the batter.
  • Top with chopped walnuts or a cream cheese frosting for added decoration.
