- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1 cup chopped spinach
- 1 carrot, grated
- 1 zucchini, grated
- 8 spring roll wrappers
- 1 egg, beaten
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup marinara sauce
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine mozzarella cheese, ricotta cheese, spinach, carrot, zucchini, garlic powder, salt, and black pepper.
- Lay a spring roll wrapper on a flat surface and place a spoonful of the cheese mixture in the center.
- Fold the sides and roll tightly. Seal edges with beaten egg.
- Repeat with remaining wrappers and filling.
- Place rolls on a baking sheet and brush with olive oil.
