Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1 cup chopped spinach
  • 1 carrot, grated
  • 1 zucchini, grated
  • 8 spring roll wrappers
  • 1 egg, beaten
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine mozzarella cheese, ricotta cheese, spinach, carrot, zucchini, garlic powder, salt, and black pepper.
  3. Lay a spring roll wrapper on a flat surface and place a spoonful of the cheese mixture in the center.
  4. Fold the sides and roll tightly. Seal edges with beaten egg.
  5. Repeat with remaining wrappers and filling.
  6. Place rolls on a baking sheet and brush with olive oil.
  7. Bake for 20 minutes or until golden brown.
  8. Serve with marinara sauce.
