- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup cherry pie filling
- 1/2 cup chopped pistachios
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
- Pour half of the cream cheese mixture over the crust, then add cherry pie filling and sprinkle with pistachios. Top with remaining cream cheese mixture.
- Bake in the preheated oven for 50-60 minutes, until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
