Cherry Pistachio Cheesecake

A rich and creamy cherry pistachio cheesecake that is easy to make and sure to impress your guests.

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
  4. Pour half of the cream cheese mixture over the crust, then add cherry pie filling and sprinkle with pistachios. Top with remaining cream cheese mixture.
  5. Bake in the preheated oven for 50-60 minutes, until the center is set.
  6. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • Serve with whipped cream for added indulgence.
  • Best enjoyed cold.
