Cherry Pistachio Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup cherries, pitted and halved
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla and sour cream.
  5. Gently fold in the cherries and pistachios.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes, or until set.
  8. Allow to cool before removing from the pan and serving.

Notes

  • For best results, let the cheesecake chill overnight before serving.
  • Top with additional cherries and crushed pistachios for a beautiful presentation.
