  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup spinach, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • 1 package eggroll wrappers
  • 1 egg, beaten (for sealing)

Instructions

  1. In a large bowl, combine shredded chicken, black beans, corn, spinach, cumin, chili powder, and cheese.
  2. Lay an eggroll wrapper on a clean surface; add 2 tablespoons of the filling.
  3. Fold the sides over the filling and roll tightly.
  4. Seal the edge with a little beaten egg.
  5. Heat oil in a large skillet over medium heat, and fry the eggrolls until golden brown.
