  • 1 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 8 ounces semi-sweet chocolate, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in sour cream, vanilla extract, and melted chocolate until fully incorporated.
  7. Pour the cheesecake batter over the crust.
  8. Bake for 45-50 minutes until the edges are set but the center still jiggles slightly.
  9. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  10. Refrigerate the cheesecake for at least 4 hours or overnight before serving.
