Chunky Monkey Banana Baked Oatmeal

A delicious and healthy twist on baked oatmeal that combines the flavors of banana and chocolate.

  • 2 cups rolled oats
  • 3 ripe bananas
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash 2 bananas and mix them with almond milk, maple syrup, and vanilla extract.
  3. In another bowl, combine rolled oats, cocoa powder, baking powder, and salt.
  4. Mix the wet ingredients with the dry ingredients until combined.
  5. Fold in the chocolate chips and walnuts.
  6. Pour the mixture into a greased baking dish.
  7. Slice the remaining banana on top and bake for 30-35 minutes.
  8. Let it cool for a few minutes before serving.

Notes
