  • 4 medium russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and let drain on paper towels.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add diced potatoes and chicken broth, bringing to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and cheese, mixing until melted.
  6. Season with salt and pepper.
  7. Serve hot, topped with bacon, sour cream, and green onions.
