- 4 large russet potatoes
- 8 slices turkey bacon
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
- Add the onion and garlic to the pot, sautéing until translucent.
- Peel and dice the potatoes, then add them to the pot with the chicken broth. Bring to a boil.
- Reduce heat and simmer for about 20 minutes, until potatoes are tender.
- Mash some of the potatoes in the pot for a creamy texture.
- Stir in the heavy cream, salt, and pepper.
- Serve the soup topped with crumbled turkey bacon, shredded cheese, sour cream, and green onions.
Notes
- For extra flavor, add your favorite herbs such as thyme or rosemary.
