Comforting Loaded Baked Potato Soup

A warm and hearty potato soup with a twist of turkey bacon, perfect for chilly days.

Ingredients

  • 4 large russet potatoes
  • 8 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, sautéing until translucent.
  3. Peel and dice the potatoes, then add them to the pot with the chicken broth. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, until potatoes are tender.
  5. Mash some of the potatoes in the pot for a creamy texture.
  6. Stir in the heavy cream, salt, and pepper.
  7. Serve the soup topped with crumbled turkey bacon, shredded cheese, sour cream, and green onions.

Notes

  • For extra flavor, add your favorite herbs such as thyme or rosemary.
  • This soup can be easily made vegetarian by omitting the turkey bacon and using vegetable broth.
