  • 1 cup blueberries
  • 1 ½ cups all-purpose flour

  • ½ cup milk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the cottage cheese, milk, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Fill the muffin cups about two-thirds full with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
