  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine black beans, corn, bell peppers, onion, jalapeño, cherry tomatoes, and cilantro.
  2. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
  3. Pour the dressing over the bean and vegetable mixture and toss gently to combine.
  4. Let it sit for at least 30 minutes to allow flavors to meld.
