Cozy Mexican Noodle Soup

A warm and comforting soup infused with Mexican flavors, perfect for a cozy night.

  • 8 ounces egg noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 cup corn, frozen or canned
  • 1 jalapeño, diced (optional)
  • 1 lime, juiced
  • 2 avocados, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onions and garlic until softened.
  3. Add the chicken ham and cook for another 2-3 minutes.
  4. Pour in the chicken broth and add the diced tomatoes. Bring to a boil.
  5. Add egg noodles, corn, chili powder, cumin, and jalapeño. Reduce heat and simmer until noodles are tender.
  6. Stir in lime juice and adjust seasoning.
  7. Serve hot, topped with diced avocado, cilantro, and crumbled turkey bacon.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms.
  • Adjust spices to your preferred level of heat.
