  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin

Instructions

  1. Start by roasting the poblano peppers until they are charred. Remove the skin and seeds, then set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop, leaving the bacon drippings in the pot.
  3. Add the diced onion and minced garlic to the pot, sautéing until translucent.
  4. Chop the roasted poblano peppers and add them to the pot along with chicken broth and cumin.
  5. Bring to a simmer and cook for 20 minutes.
  6. Blend the mixture until smooth, then stir in the heavy cream. Add the cooked turkey bacon back to the soup.
  7. Season with salt and pepper to taste, and serve warm.
