- 1 cup orzo pasta
- 2 cups butternut squash, diced
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup Parmesan cheese, grated
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until tender.
- In a large pot, cook the orzo according to package instructions. Drain and set aside.
- In the same pot, sauté garlic until fragrant, then stir in vegetable broth and heavy cream.
- Add the cooked orzo, roasted butternut squash, fresh spinach, and nutmeg. Stir to combine.
- Remove from heat and mix in Parmesan cheese until melted and creamy.
