Creamy Orzo with Roasted Butternut Squash and Spinach

A delightful recipe combining creamy orzo, roasted butternut squash, and fresh spinach, perfect for a comforting meal.

  • 1 cup orzo pasta
  • 2 cups butternut squash, diced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until tender.
  3. In a large pot, cook the orzo according to package instructions. Drain and set aside.
  4. In the same pot, sauté garlic until fragrant, then stir in vegetable broth and heavy cream.
  5. Add the cooked orzo, roasted butternut squash, fresh spinach, and nutmeg. Stir to combine.
  6. Remove from heat and mix in Parmesan cheese until melted and creamy.
  7. Serve warm and enjoy!

Notes

  • For a vegan version, replace heavy cream with coconut cream and Parmesan with nutritional yeast.
