Creamy Steak & Potato Soup

  • 1 pound steak, diced
  • 6 slices turkey bacon, cooked and crumbled
  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the diced steak and brown on all sides.
  3. Add the onion and garlic, cooking until softened.
  4. Add the potatoes and beef broth, bringing to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in the heavy cream and season with salt, pepper, and thyme.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a thicker soup, mash some of the potatoes in the pot.
  • Feel free to add vegetables like carrots or celery for more flavor.
