1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
2 packages (8 ounces each) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup heavy cream
1/4 cup brown sugar, for topping
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of cupcake liners in a muffin tray.
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
Add vanilla extract and eggs, mixing until fully incorporated.
Gradually add the heavy cream and mix until the batter is smooth.
Pour the cheesecake mixture over the crust in each cupcake liner.
Bake for about 20-25 minutes or until the centers are set.
Once cooled, sprinkle brown sugar on top of each cupcake.
Using a kitchen torch, carefully caramelize the sugar until golden and crispy.
Notes
Allow cupcakes to cool completely before adding burnt sugar topping.
Using a kitchen torch gives the best results, but broiling in the oven is an alternative if you don’t have one.
