1 pound boneless, skinless chicken breasts
4 cups chicken broth
1 can diced tomatoes
1 cup chopped onions
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 cup pasta (such as small shells)
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Place the chicken breasts in the crockpot.
Add the chicken broth, diced tomatoes, onions, garlic, basil, and oregano. Stir to combine.
Cover and cook on low for 6-8 hours or high for 4-5 hours.
In the last 30 minutes of cooking, add the pasta to the soup.
Once the chicken is cooked, shred it in the crockpot.
Stir in the mozzarella and Parmesan cheeses until melted.
Season with salt and pepper to taste before serving.
