Crockpot Vegetarian Tortilla Soup

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (for topping)
  • 1/2 cup tortilla chips (for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté onion and garlic until soft.
  2. Add bell pepper and carrots, cooking for an additional 5 minutes.
  3. Transfer sautéed vegetables to the crockpot.
  4. Add diced tomatoes, vegetable broth, black beans, corn, chili powder, cumin, salt, and pepper to the crockpot.
  5. Stir well and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot, topped with diced avocado and tortilla chips.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • This soup can be made ahead and stored for later.
