Crunchy Quinoa Veggie Patties

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon salt
  • 1 carrot, grated
  • 1 bell pepper, diced
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 cup breadcrumbs
  • 1 egg, beaten

Instructions

  1. Rinse quinoa under cold water.
  2. In a saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In a large bowl, mix cooked quinoa with grated carrot, diced bell pepper, green onions, garlic powder, cumin, breadcrumbs, and beaten egg.
  4. Shape mixture into patties.
  5. Heat oil in a skillet over medium heat and cook patties until golden brown on both sides.
