Easy Thai Chicken Curry Soup

  • 1 pound chicken breast, diced
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, bell peppers, and snap peas)
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 bunch cilantro, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion becomes translucent.
  3. Stir in the red curry paste and cook for 1-2 minutes until fragrant.
  4. Add the diced chicken and cook until no longer pink.
  5. Pour in the coconut milk and chicken broth. Bring to a simmer.
  6. Add the mixed vegetables and cook until tender.
  7. Stir in fish sauce and lime juice. Cook for another 2 minutes.
  8. Garnish with fresh cilantro before serving.
