Fall Harvest Pasta Salad

A delicious and hearty fall dish that combines the flavors of turkey bacon, chicken ham, and seasonal vegetables in a pasta salad.

Ingredients

  • 8 ounces pasta (your choice)
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell peppers
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then chop it into bits.
  3. In a large bowl, combine the cooked pasta, turkey bacon, chicken ham, cherry tomatoes, bell peppers, red onion, and parsley.
  4. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Refrigerate for 30 minutes before serving for best flavor.
