  • 1/2 cup cherry preserves
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup melted coconut oil
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the rolled oats and milk and let it sit for 10 minutes.
  3. In a separate bowl, mix together the whole wheat flour, brown sugar, baking soda, baking powder, salt, and cinnamon.
  4. Add the oat mixture, melted coconut oil, cherry preserves, and egg to the dry ingredients and stir until just combined.
  5. Fill each muffin cup 3/4 full with the batter.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Allow to cool before serving.
