Gluten Free Pumpkin Oatmeal Cookies

These gluten free pumpkin oatmeal cookies are a delightful treat, perfectly spiced and easy to make.

  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, brown sugar, and coconut oil until well combined.
  3. Add the vanilla extract and stir.
  4. In a separate bowl, combine the gluten free oats, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop spoonfuls of the dough onto a lined baking sheet.
  7. Bake for 12-15 minutes or until lightly golden.
  8. Let cool before serving.

Notes

  • For a sweeter cookie, increase the brown sugar to 3/4 cup.
  • These cookies can be frozen for later enjoyment.
