Gordon Ramsay’s Roasted Tomato Soup

A delicious roasted tomato soup recipe featuring turkey bacon for a comforting meal.

Ingredients

  • 2 pounds ripe tomatoes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 cup heavy cream
  • 4 strips turkey bacon, cooked and chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 25-30 minutes.
  4. In a large pot, sauté the onion and garlic until softened.
  5. Add the roasted tomatoes, broth, basil, and bay leaf. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes. Remove the bay leaf.
  7. Blend the soup until smooth, then stir in the heavy cream.
  8. Serve hot, topped with turkey bacon.

Notes

  • For a spicier version, add red pepper flakes.
  • Pair with crusty bread for a complete meal.
