  • 1 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup chopped apples
  • 1/4 cup nuts or seeds of choice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the oats, applesauce, eggs, honey (or maple syrup), and vanilla extract.
  3. Add the baking powder, cinnamon, chopped apples, and nuts (if using) to the mixture and combine well.
  4. Pour the batter into a greased baking dish.
  5. Bake for 25-30 minutes or until set and lightly golden on top.
