Healthy Pumpkin Donut Holes (Paleo + Gluten-Free)

Delicious and healthy pumpkin donut holes that are both paleo and gluten-free, perfect for a sweet treat.

Ingredients

  • 1 cup almond flour
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, mix pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract until smooth.
  4. Combine wet and dry ingredients and stir until well mixed.
  5. Using a small cookie scoop, drop the batter onto a greased baking sheet.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Let cool before serving.
