- 1 cup almond flour
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, pumpkin spice, baking soda, and salt.
- In another bowl, mix pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract until smooth.
- Combine wet and dry ingredients and stir until well mixed.
- Using a small cookie scoop, drop the batter onto a greased baking sheet.
- Bake for 12-15 minutes, or until golden brown.
- Let cool before serving.
