- 4 medium sweet potatoes
- 1 pound ground turkey
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 cup corn, frozen or canned
- 1 avocado, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes until tender.
- In a large skillet, sauté the onion and garlic until fragrant.
- Add the ground turkey, cooking until browned. Stir in the black beans, diced tomatoes, corn, chili powder, cumin, salt, and black pepper. Simmer for 10-15 minutes.
- Remove the sweet potatoes from the oven and slice them open.
- Stuff the sweet potatoes with the turkey chili mixture. Top with diced avocado.
