  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup hot water
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract, then mix well.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until combined.
  5. Slowly stir in the hot water until the batter is smooth.
  6. Pour the batter into the cupcake liners, filling them about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool completely.
  9. Top with mini marshmallows before serving.

Notes

  • For extra flavor, add a sprinkle of cinnamon to the batter.
  • These cupcakes are best enjoyed fresh but can be stored for up to 3 days.
