Instant Pot Egg Biryani

  • 4 eggs
  • 1 cup basmati rice
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon biryani masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/4 cup fresh coriander, chopped
  • 1/4 cup fresh mint leaves, chopped

Instructions

  1. Boil the eggs in the Instant Pot for 5 minutes and then transfer to cold water.
  2. In the same pot, heat oil and sauté onions until golden.
  3. Add ginger-garlic paste, tomatoes, and spices; cook until blended.
  4. Add rinsed basmati rice and water; mix well.
  5. Place the eggs on top of the rice and close the lid.
  6. Cook on high pressure for 6 minutes, then quick release.
  7. Garnish with coriander and mint before serving.

Notes

  • For a spicier version, add green chilies while sautéing.
  • Leftover biryani tastes even better the next day!
