- 1 pound Italian sausage
- 2 cans white beans, drained
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups kale, chopped
- 1 carrot, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add the diced onion and carrot, and sauté until softened.
- Add the minced garlic and cook for another minute.
- Add the Italian sausage and cook until browned.
- Stir in the white beans, chicken broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the chopped kale, and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste before serving.

- This soup can be made in advance and tastes even better the next day.
