Italian Sausage and White Bean Soup

A hearty and flavorful Italian sausage and white bean soup that makes for a perfect cozy meal.

Ingredients

  • 1 pound Italian sausage
  • 2 cans white beans, drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups kale, chopped
  • 1 carrot, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and carrot, and sauté until softened.
  2. Add the minced garlic and cook for another minute.
  3. Add the Italian sausage and cook until browned.
  4. Stir in the white beans, chicken broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the chopped kale, and cook for an additional 5 minutes until wilted.
  6. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made in advance and tastes even better the next day.
  • Feel free to add your favorite vegetables!
