- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until onion is translucent.
- Add broccoli and chicken broth, bringing to a boil. Reduce heat and simmer until broccoli is tender.
- Blend the soup until smooth, then return to the pot.
- Stir in heavy cream and shredded cheddar cheese. Cook over low heat until cheese melts.
- Season with garlic powder, onion powder, salt, and pepper.
- Serve hot, topped with crumbled turkey bacon.
