Korean Cucumber Salad

Ingredients

  • 2 cucumbers
  • 1 tablespoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 2 tablespoons sesame seeds
  • 2 green onions, chopped

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess moisture.
  3. In a separate bowl, whisk together the rice vinegar, sugar, sesame oil, and minced garlic.
  4. Rinse the cucumbers under cold water and drain well.
  5. Add the cucumbers to the vinegar mixture and toss to coat.
  6. Stir in sesame seeds and green onions.
  7. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
