  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prep a muffin tin with liners.
  2. In a mixing bowl, combine pumpkin puree, Greek yogurt, eggs, honey (or maple syrup), and vanilla extract.
  3. In another bowl, mix oat flour, baking soda, baking powder, pumpkin spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill muffin cups about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring muffins to a wire rack.

Notes

  • For extra flavor, add chocolate chips or nuts to the batter.
