  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces turkey bacon, cooked and chopped
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 cup salsa

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. In a skillet, cook turkey bacon until crispy, then remove from heat.
  3. In the same skillet, scramble the egg mixture until just set.
  4. To assemble, lay a tortilla flat, add some scrambled eggs, turkey bacon, cheese, and salsa, then roll tightly.
  5. Place enchiladas seam-side down in a greased baking dish.
  6. Top with remaining salsa and cheese.
  7. Cover with foil and refrigerate for at least 30 minutes or overnight.
  8. When ready to cook, preheat oven to 350°F (175°C) and bake for 25-30 minutes.
