Mouthwatering One Pot Lasagna Soup

A delicious and hearty soup that combines the flavors of lasagna with the convenience of a one pot dish.

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add olive oil to the pot, then sauté the onion and garlic until softened.
  3. Stir in the crushed tomatoes, chicken broth, and broken lasagna noodles.
  4. Season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until noodles are tender.
  5. Stir in chicken ham, and cook for an additional 5 minutes.
  6. Remove from heat and stir in ricotta, mozzarella, and Parmesan until melted.
  7. Top with the crispy turkey bacon before serving.

Notes

  • For a creamier soup, add more ricotta.
  • Make sure not to overcook the noodles to maintain the texture.
