- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 8 ounces lasagna noodles, broken
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add olive oil to the pot, then sauté the onion and garlic until softened.
- Stir in the crushed tomatoes, chicken broth, and broken lasagna noodles.
- Season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until noodles are tender.
- Stir in chicken ham, and cook for an additional 5 minutes.
- Remove from heat and stir in ricotta, mozzarella, and Parmesan until melted.
- Top with the crispy turkey bacon before serving.
Notes
- For a creamier soup, add more ricotta.
- Make sure not to overcook the noodles to maintain the texture.
