Our Favorite Shakshuka

Ingredients

  • 4 large eggs
  • 4 strips turkey bacon
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same skillet, add onion, bell pepper, and garlic, and sauté until softened.
  3. Add cumin and paprika, stirring for a minute until fragrant.
  4. Pour in crushed tomatoes, season with salt and pepper, and bring to a simmer.
  5. Make wells in the sauce, crack the eggs into the wells, cover, and cook until the eggs are done to your liking.
  6. Top with chopped turkey bacon and parsley before serving.
