  • 1 cup mascarpone cheese
  • 2 cups heavy cream, whipped
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, blend pistachios until finely ground.
  3. In a bowl, combine flour, baking powder, baking soda, and salt.
  4. In another bowl, cream butter and sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla and ground pistachios.
  7. Gradually add the flour mixture to the wet ingredients.
  8. Divide batter into prepared cake pans and bake for 25-30 minutes.
  9. Allow cakes to cool before layering with mascarpone and whipped cream mixture.
