- 1 pound ground beef
- 1 cup diced carrots
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups diced potatoes
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Add ground beef, cooking until browned.
- Stir in diced carrots and cook for a few minutes.
- Add potatoes, beef broth, tomato paste, thyme, and rosemary. Bring to a boil.
- Reduce heat and simmer for about 20 minutes until potatoes are tender.
- Stir in frozen peas and simmer for another 5 minutes.
