Protein Packed Shepherd’s Pie Soup

A hearty and nutritious soup that replicates the classic shepherd’s pie while being light and healthy.

Ingredients

  • 1 pound ground beef
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups diced potatoes
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add ground beef, cooking until browned.
  3. Stir in diced carrots and cook for a few minutes.
  4. Add potatoes, beef broth, tomato paste, thyme, and rosemary. Bring to a boil.
  5. Reduce heat and simmer for about 20 minutes until potatoes are tender.
  6. Stir in frozen peas and simmer for another 5 minutes.
  7. Serve hot, optionally garnished with fresh herbs.

Notes

  • This soup can be prepared ahead of time and tastes even better the next day.
  • For extra creaminess, consider adding a splash of milk or cream before serving.
