Pumpkin Bars with Brown Sugar Frosting

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup brown sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 baking pan.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil until smooth.
  3. Add in eggs and mix well until combined.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Spread the batter into the prepared baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. While the bars are cooling, prepare the frosting by beating together the softened butter, powdered sugar, brown sugar, and milk until smooth.
  9. Once the bars have cooled, spread the frosting evenly over the top.
  10. Cut into squares and serve.
