  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 3 large eggs
  • 8 ounces cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, blend the granulated sugar, brown sugar, pumpkin puree, oil, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour half of the batter into a greased loaf pan.
  6. Spread the cream cheese over the batter, then add the remaining batter on top.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing.
