  • 12 jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup Gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage, chopped
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions, drain, and set aside.
  3. In a bowl, mix the pumpkin puree, Gouda, ricotta, nutmeg, salt, and pepper.
  4. Stuff each shell with the filling mixture.
  5. In a saucepan, melt the butter over medium heat, add the sage, and cook until browned.
  6. Add the cream and Parmesan to the butter sauce, stirring to combine.
  7. Arrange the stuffed shells in a baking dish and pour the sauce over the top.
  8. Bake for 25-30 minutes or until golden and bubbly.

Notes

  • For extra flavor, add more sage to the sauce.
  • Can substitute Gouda with any melty cheese if desired.
