A delicious blend of pumpkin, mushrooms, and crispy turkey bacon tossed with spaghetti.

Ingredients

  • 8 ounces spaghetti
  • 1 cup pumpkin puree
  • 1 cup mushrooms, sliced
  • 4 slices crispy turkey bacon, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat and add garlic, cooking until fragrant.
  3. Add mushrooms and cook until softened.
  4. Stir in pumpkin puree, thyme, salt, and pepper. Cook until heated through.
  5. Add crispy turkey bacon to the mixture.
  6. Toss spaghetti with the pumpkin and mushroom sauce.
  7. Serve with grated Parmesan cheese on top.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Leftover pumpkin puree can be used in other recipes.
